Manufacturing Process
Raw Material Preparation
Dried cumin seeds (moisture ≤ 10%) are cleaned using a vibratory screen and aspirator to remove weed seeds, stones, dust, and foreign matter. Seeds may be lightly cracked in a roller mill to improve access to oil-bearing vittae structures. Cleaning is particularly important for cumin as raw seeds from field processing often carry significant dust and weed seed contamination that can affect oil quality.
Loading the Still
Cleaned cumin seeds (whole or lightly cracked) are charged into the SS 316L distillation vessel and distributed evenly over the perforated false bottom at a controlled bed depth of 0.8–1.5 m. The vessel is sealed and connected to the steam supply. For hydro-distillation, demineralised water is added at a 3:1 ratio; hydro-distillation gives a slightly different oil character with higher cuminaldehyde proportion.
Steam Distillation
Live steam at 0.5–1.5 bar is injected below the false bottom. Lighter terpene hydrocarbons (p-cymene, γ-terpinene, β-pinene) distil first in the initial 1–2 hours. Cuminaldehyde, being a heavier aldehyde constituent, follows over the next 1–3 hours, requiring a sustained distillation run. Total distillation time is 2.5–4 hours at still temperatures of 100–108 °C.
Condensation
The vapour mixture of steam and cumin oil passes through an insulated gooseneck into the shell-and-tube condenser. The condenser is sized for the peak vapour load in the initial monoterpene-rich phase. Cooling water circulates counter-currently on the shell side at 28–38 °C. The condenser is fabricated from SS 316L to handle the slightly acidic and aldehydic condensate without corrosion.
Oil-Water Separation
Condensate flows into the SS 316L Florentine flask where cumin oil (specific gravity 0.895–0.925) floats on the hydrosol and continuously overflows into the collection vessel. Cumin hydrosol has a distinctive warm, earthy aroma and is used as a flavouring in some food applications. The Florentine flask is sized for adequate residence time to achieve clean oil-hydrosol separation.

Cumin seed oil is tested for specific gravity (0.895–0.925 at 25 °C), refractive index (1.498–1.508), cuminaldehyde content (≥25% by GC-MS), p-cymene content, optical rotation (−3° to +1°), and distinctive animalic-warm organoleptic profile. Conforming oil is filled into amber glass bottles or food-grade aluminium containers under nitrogen blanket, with batch GC-MS certificates.
